Marshmallow Chocolate- Chip Cookies


  • 280g Plain Flour
  • 1 Tsp Baking Powder
  • 1.5 Tsp Cornflour
  • .5 Tsp Salt
  • 170g Unsalted Butter
  • 135g Light Brown Sugar
  • 100g Granulated Sugar
  • 1 Egg
  • 1 Egg Yolk
  • 2 Tsp Vanilla Extract
  • 180g Chocolate Chips
  • 2 Handfuls of Mimi Marshmallows


  1. Place the 280g of flour, the 1.5 Tsp or Cornstarch, the 1 Tsp of Baking Powder and the .5 Tsp of Salt in a large bowl and mix
  2. Place the 135g of Light Brown Sugar, the 100g of Granulated Sugar, the 170g Melted Unsalted Butter and the 2 Tsp of Vanilla Extract in a bowl and mix.
  3. Whisk the egg and the egg yolk together and add them into the wet mixture.
  4. Mix the dry ingredients in together with the wet ingredients and when these have been thoroughly mixed together add the chocolate chops and the mini marshmallows.
  5. Leave the dough in the fridge to chill for a minimum of 3 hours
  6. When the dough has chilled, roll the dough into balls and place them on a baking tray. They will spread out when they have been cooked in the oven and they will turn into the perfect cookie shape!
  7. Bake the cookies at 190 degrees and cook until they start to turn golden brown.
